La Macération du Soula


This is an extraordinary wine, quite simply beguiling. Complexity, elegance, concentration, freshness and balance all perfectly aligned. 

Wendy Wilson makes this wine in the stunning vineyards of La Soula, situated between the Languedoc and Catalonia. It's a skin contact blend of 76% Vermentino & 24% Macabeu macerated on skins for 10-15 days. The outrageous complexity is partly due to the fact that it's blended from many vintages, building layer upon layer of flavour and interest. Here we have a blend of 2019 (36%) 2018 (24%) 2017 (12%) 2015 (12%) 2014 (16%).

There's a stone fruit core, with notes of mango, garrigues, roasted nuts and bees wax. There's a savoury structure to the wine with light tannin, and a lovely waxy texture providing plenty of interest.
